Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) package cornbread mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

Instructions
 

  • Preheat Oven: Heat your oven to 375°F (190°C).
  • Prepare the Meat: In a large skillet over medium heat, brown the ground beef with the onion, garlic, and bell pepper until the meat is cooked through.
  • Add Flavors: Stir in the chili powder, cumin, and diced tomatoes. Season with salt and pepper to taste. Simmer until everything is well combined, about 5 minutes.
  • Prepare the Cornbread: While the meat simmers, prepare the cornbread mix according to the package instructions.
  • Assemble the Pie: Transfer the meat mixture to a baking dish. Spread the cornbread mixture evenly over the top of the meat.
  • Bake: Place the dish in the oven and bake for 25 minutes. Then sprinkle the cheddar cheese over the cornbread and return to the oven for another 10 minutes, or until the cornbread is cooked and the cheese is melted and bubbly.
  • Serve: Allow the pie to cool for a few minutes before serving to help it set up for easier slicing.
