  • 1 cup shredded cheese a blend of cheddar, Monterey Jack, and mozzarella works well
  • 1 tablespoon butter or cooking spray for grilling
  • Optional Add-Ons: Diced tomatoes sour cream, guacamole, or hot sauce

Instructions
 

1. Prepare the Filling:

  • - Cook the turkey bacon or beef bacon in a skillet until crispy. Once done, place it on a paper towel to drain excess grease. If using a vegetarian bacon alternative, cook it according to package instructions.
  • - In a separate bowl, whisk the eggs, then scramble them in a non-stick pan over medium heat. Cook until fluffy and set aside.

2. Assemble the Quesadilla:

  • - Lay one tortilla flat on a clean surface. Sprinkle half the shredded cheese evenly over the tortilla.
  • - Add the scrambled eggs, bacon (or other protein), and any optional add-ons like tomatoes or guacamole.
  • - Sprinkle the remaining cheese on top, then cover with the second tortilla.

3. Grill the Quesadilla:

  • - Heat a skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  • - Place the assembled quesadilla onto the skillet and cook for 2–3 minutes, or until the tortilla is golden brown and crispy.
  • - Carefully flip the quesadilla using a spatula and cook the other side for another 2–3 minutes, ensuring the cheese melts completely.

4. Slice and Serve:

  • - Remove the quesadilla from the skillet and let it rest for a minute.
  • - Slice it into wedges and serve warm with your choice of sides and dips like sour cream, salsa, or guacamole.
