- 3 Chicken Breasts: large, boneless and skinless, sliced lengthwise into thin cutlets
- ½ tbsp Salt
- ¼ tbsp Ground Black Pepper
- 6 All-Purpose Flour: (for dredging)
- 2 tbsp Olive Oil
- 2 tbsp Unsalted Butter
- 3 cloves Garlic minced
- 1 cup Chicken Stock
- 1 cup Heavy Cream
- ½ cup Parmesan Cheese grated
- 1 tbsp Chili Flakes
- ¼ tbsp Oregano
- ¼ tbsp Thyme
- ⅓ cup Sun-dried Tomatoes chopped
- 1 tbsp Fresh Basil Leaves chopped (for garnish)
Prepare the Chicken:
Season the chicken cutlets with salt and pepper.
Dredge each cutlet in flour, shaking off any excess.
In a large skillet, heat the olive oil and melt the butter over medium heat. Swirl to coat the pan evenly.
Make the Sauce:
In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
Add the chicken stock to deglaze the pan, scraping up any bits stuck to the bottom.
Stir in the heavy cream, parmesan cheese, chili flakes, oregano, and thyme. Allow the sauce to simmer for a few minutes until it begins to thicken.
Combine
Return the chicken to the skillet, adding the sun-dried tomatoes.
Let everything simmer together for a few more minutes until the chicken is heated through and the sauce is creamy.
