Ingredients
  

  • 3 Chicken Breasts: large, boneless and skinless, sliced lengthwise into thin cutlets
  • ½ tbsp Salt
  • ¼ tbsp Ground Black Pepper
  • 6 All-Purpose Flour: (for dredging)
  • 2 tbsp Olive Oil
  • 2 tbsp Unsalted Butter
  • 3 cloves Garlic minced
  • 1 cup Chicken Stock
  • 1 cup Heavy Cream
  • ½ cup Parmesan Cheese grated
  • 1 tbsp Chili Flakes
  • ¼ tbsp Oregano
  • ¼ tbsp Thyme
  • cup Sun-dried Tomatoes chopped
  • 1 tbsp Fresh Basil Leaves chopped (for garnish)

Instructions
 

Prepare the Chicken:

  • Season the chicken cutlets with salt and pepper.
  • Dredge each cutlet in flour, shaking off any excess.
  • In a large skillet, heat the olive oil and melt the butter over medium heat. Swirl to coat the pan evenly.

Cook the Chicken:

  • Brown the chicken on each side for about 4-5 minutes until golden and cooked through. Transfer to a plate and cover to keep warm.

Make the Sauce:

  • In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
  • Add the chicken stock to deglaze the pan, scraping up any bits stuck to the bottom.
  • Stir in the heavy cream, parmesan cheese, chili flakes, oregano, and thyme. Allow the sauce to simmer for a few minutes until it begins to thicken.

Combine

  • Return the chicken to the skillet, adding the sun-dried tomatoes.
  • Let everything simmer together for a few more minutes until the chicken is heated through and the sauce is creamy.

Garnish and Serve

  • Garnish with chopped fresh basil leaves.
  • Serve the chicken and sauce over cooked pasta or your choice of side.
