- 2 Chicken Breasts: large boneless, skinless
- 1 tbsp Italian Seasoning
- 1/2 tbsp Paprika
- Salt and Pepper: To taste
- 1/2 Avocado Oil
- 1 tbsp Unsalted Butter
- 1/2 Yellow Onion large, diced
- Garlic 4 cloves, minced
- 2 cups Chicken Broth
- 8 ounces Penne Pasta
- 1/2 cup Heavy Cream
- 1 cup Parmesan Cheese freshly grated
- 2 tbsp Parsley chopped
Prepare the Chicken:
Flatten the chicken breasts to even thickness and season both sides with Italian seasoning, paprika, salt, and pepper.
Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side or until golden and cooked through. Remove from skillet and set aside to rest.
Sauté Vegetables
Reduce heat to medium. Add the remaining avocado oil and butter to the skillet. Once melted, add the diced onion and cook until translucent, about 3 minutes.
Add the minced garlic and cook for another minute until fragrant.
