Ingredients
  

  • 2 Chicken Breasts: large boneless, skinless
  • 1 tbsp Italian Seasoning
  • 1/2 tbsp Paprika
  • Salt and Pepper: To taste
  • 1/2 Avocado Oil
  • 1 tbsp Unsalted Butter
  • 1/2 Yellow Onion large, diced
  • Garlic 4 cloves, minced
  • 2 cups Chicken Broth
  • 8 ounces Penne Pasta
  • 1/2 cup Heavy Cream
  • 1 cup Parmesan Cheese freshly grated
  • 2 tbsp Parsley chopped

Instructions
 

Prepare the Chicken:

  • Flatten the chicken breasts to even thickness and season both sides with Italian seasoning, paprika, salt, and pepper.
  • Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side or until golden and cooked through. Remove from skillet and set aside to rest.

Sauté Vegetables

  • Reduce heat to medium. Add the remaining avocado oil and butter to the skillet. Once melted, add the diced onion and cook until translucent, about 3 minutes.
  • Add the minced garlic and cook for another minute until fragrant.

Cook the Pasta:

  • Pour in the chicken broth and bring to a simmer. Add the penne pasta, making sure it is submerged. Cover and let cook for 10-12 minutes or until pasta is al dente.

Finish the Sauce:

  • Lower the heat and stir in the heavy cream and grated Parmesan cheese until the cheese is melted and the sauce is creamy. Adjust seasoning with salt and pepper.

Combine

  • Slice the rested chicken into strips. Add the chicken and chopped parsley to the skillet. Stir to combine and heat through.

Serve

  • Serve the pasta hot, garnished with extra Parmesan cheese and parsley if desired.
