Ingredients
  

  • 2 pounds of potatoes peeled and sliced
  • 3 cups shredded cheddar cheese
  • 1 medium onion chopped
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • Salt and pepper to taste
  • Optional: chives or green onions for garnish

Instructions
 

  • Layer Ingredients: Grease the crockpot and layer half of the potatoes, onion, and cheese. Repeat with the remaining potatoes, onion, and cheese.
  • Mix Sauce: In a bowl, mix the cream of chicken soup, sour cream, melted butter, salt, and pepper.
  • Combine: Pour the sauce mixture evenly over the layered ingredients in the crockpot.
  • Cook: Cover and cook on low for 5-6 hours or on high for 3 hours, until the potatoes are tender.
  • Garnish and Serve: Garnish with chives or green onions before serving, if desired.
