Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 2 cans cannellini beans drained and rinsed
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until soft.
  • Add the bell pepper and cook for another 5 minutes.
  • Stir in the cannellini beans, diced tomatoes, and tomato paste.
  • Pour in the vegetable broth and add chili powder, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
