- 1 large onion chopped
- 3 cloves garlic minced
- 1 red bell pepper chopped
- 2 cans cannellini beans drained and rinsed
- 1 can diced tomatoes
- 2 tablespoons tomato paste
- 1 cup vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until soft.
