Ingredients
  

For the Pancakes:

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tbsp baking powder
  • ½ tbsp salt
  • 2 eggs
  • 1 1/2 cups milk
  • ¼ cup melted butter

For the Banana Foster Sauce

  • 4 tbsp butter
  • ½ cup brown sugar
  • ½ tbsp ground cinnamon
  • 4 4 bananas, sliced
  • ¼ cup dark rum
  • Optional ½ cup chopped pecans or walnuts for garnish

Instructions
 

Prepare the Pancakes

  • In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the eggs, milk, and melted butter.
  • Gradually mix the wet ingredients into the dry ingredients until just combined.

Cook the Pancakes

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  • Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.

Make the Banana Foster Sauce

  • In a skillet, melt the butter and add the brown sugar and cinnamon. Cook until the sugar dissolves.
  • Add the sliced bananas and cook until they are caramelized.
  • Carefully add rum and, if safe, flame it to cook off the alcohol.

Serve

  • Stack the pancakes on a plate, top with the caramelized banana sauce, and garnish with chopped nuts if desired.
