For the Pancakes:
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tbsp baking powder
- ½ tbsp salt
- 2 eggs
- 1 1/2 cups milk
- ¼ cup melted butter
For the Banana Foster Sauce
- 4 tbsp butter
- ½ cup brown sugar
- ½ tbsp ground cinnamon
- 4 4 bananas, sliced
- ¼ cup dark rum
- Optional ½ cup chopped pecans or walnuts for garnish
Prepare the Pancakes
In a large mixing bowl, combine flour, sugar, baking powder, and salt.
In another bowl, whisk together the eggs, milk, and melted butter.
Gradually mix the wet ingredients into the dry ingredients until just combined.
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it.
Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
