  • 1 cup rolled oats
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup coconut sugar or brown sugar
  • ¼ cup maple syrup or honey
  • 1 large egg or flax egg for vegan option
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • Optional mix-ins: Chocolate chips dried fruits, chopped nuts, or cinnamon.

Instructions
 

1. Preheat the Oven

  • Set your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.

2. Mix Dry Ingredients

  • In a large bowl, whisk together almond flour, rolled oats, baking soda, and salt.

3. Combine Wet Ingredients

  • In a separate bowl, mix the coconut sugar, maple syrup, egg, melted coconut oil, and vanilla extract until smooth.

4. Blend Wet and Dry Ingredients

  • Gradually add the wet mixture to the dry ingredients.
  • Stir until fully combined, then fold in any optional mix-ins.

5. Form Cookies

  • Scoop dough into tablespoon-sized balls and place them on the prepared baking sheet.
  • Flatten slightly with the back of a spoon or your palm.

6. Bake

  • Bake for 10–12 minutes or until the edges turn golden brown.
